It’s a summer of dining specials in Las Vegas, and restaurants are coming in hot. From breezy cocktail hours in French Riviera-inspired spots to under-the-radar dim sum socials, and even resort-wide tasting menu programs, you can maximize your dining dollars with some of the best food in the world.

Take a bite of this entire resort

Eight restaurants at the Fontainebleau are offering specially priced multi-course summer menus through September 1. KYU (pronounced "Q"... as in Asian BBQ) might have the most intriguing meal. Appetizers include gyoza, hamachi crudo, or tuna crispy rice, followed a choice of entree (go with the Korean fried chicken or Asian-style baby back ribs) and options for dessert, including a dark chocolate s'mores cake with banana-bourbon ice cream or cinnamon roll with chai frosting. The cost? $80 per person.

Other restaurants in the Taste of Fontainebleau prix-fixe summer menu series include Chyna Club ($90), Don’s Prime ($105 + $65 wine pairing), Komodo ($75), La Fontaine ($65), The Tavern ($55), Vida ($45) and Washing Potato ($70). Check with each individual restaurant for times and availability.

 

Indulge in golden hour on the Riviera

The food at LPM Restaurant & Bar is served with bright flavors and inspiration from the French Riviera. In the spirit of a breezy apéro, the Cosmopolitan restaurant recently introduced a new Cinq à Sept cocktail hour in the bar and lounge area, 5-7 p.m. Wednesday-Sunday. Opt for a $45 three-course menu with a choice of appetizer (like prawn skewers or escargot), main entree (including grilled chicken or seabass) and sorbet for dessert. Add on select bites for $13 each and sip on cocktails for just $12, a great price on the Strip these days.

Make dining a sporting event

Guy Fieri's Flavortown Sports Kitchen at the Horseshoe now serves an all-you-can-eat brunch for $19.99 per person. Enjoy dishes like mac n' cheese topped with brisket burnt ends, spicy "Dragon's Breath" chili, and brioche banana custard French Toast — and don't hesitate to ask for seconds. Add on premium options like chicken n' waffles or steak and eggs for just $5 extra. A bottomless cocktail pairing with a choice of mimosas, margaritas or Bloody Marys is $29.99.

Book an epic dinner party

Another Cosmopolitan restaurant, Superfrico, just unveiled a new concept, The Party, which unfolds over the course of two hours in the intimate Blue Room, Sunday-Thursday at 7 p.m. Up to 50 guests get to experience a three-course meal for $150 per person with a filet, branzino picatta, mushroom gnocchi or upgrade with an Australian wagyu rib cap as the main entree. Mingle over food and cocktails while enjoying a night of comedy and burlesque.

One resort, two beefy bargains

Stanton Social Prime, a stylish steakhouse near Omnia nightclub, has a simple, but enticing summer prix fixe menu, beginning at $80 per person with the option of adding drink pairings. Begin with a Caesar salad, caprese on grilled focaccia, or manicotti with a wagyu meatball, followed by a New York Strip, salmon or Chicken Parm and a S'mores Pie for dessert.

It's worth noting that the other big beef destination at Caesars Palace, Peter Luger Steak House, has a Power Lunch Wednesday-Sunday with an appetizer, side, main entree (with an incredible 10 oz. burger, made with prime ground chuck and dry-aged steak trimmings, as an option) and hot fudge sundae for $50.

Take on resort-wide summer savings

The Bellagio has one of the  most impressive restaurant portfolios on the Strip, so take advantage of the resort's Summer to Savor series of tasting menus, available through August 8. Wolfgang Puck's Spago, for example, has a bigeye tuna or red gem salad appetizer, followed by a main course of Ora King salmon or pan-roasted Jidori chicken breast. Get an American Wagyu ribeye (with an upgrade) or an extra "mid-course" of mushroom agnolotti. Save room for the cheesecake at the end and ask for a table overlooking the Bellagio fountains. Dinner begins at $90 per person with $115 for wine pairing.Other restaurants with Summer to Savor menus include Mayfair Supper Club ($95 + $50 wine pairings), Michael Mina ($95), Jasmine ($88), Yellowtail ($85) and Harvest ($70). 

Order like a local

Michael Mina's latest Las Vegas concept, Bourbon Steak at the Four Seasons, has an unpublished Secret Menu that's available to anyone who asks, but is known informally as the "locals menu." The meal includes a choice of appetizer (like tempura squash blossoms or mini crab cakes), entree (including two steak options, grilled branzino, or roasted organic chicken) and dessert (warm beignets or Basque cheesecake). You also get two sides and — like everyone else — a complimentary trio of duck fat fries to start off the meal.

Venetian values, unmasked

Mott 32, best known for elevated Cantonese cuisine and an authentic Peking Duck (that usually requires advance notice to order), has an under-the-radar Dim Sum Social on Friday afternoons. Hang out in the lounge and nibble away at your choice of 14 dishes, from spicy Iberico pork soup dumplings to wild mushroom spring rolls. Prices range between $12 and $24 per item. Nearby, right off the Palazzo lobby, Wakuda serves upscale Japanese cuisine in a variety of formats, from the semi-casual atmosphere of the lounge in the front to a secluded omakase room in the back. Stick to the main dining room for a special five-course summer menu, available through August 28 for $120 per person. Choose between salmon, steak or chicken to complement sushi, sashimi and an irresistible miso-ube soft-serve ice cream dessert.
